Caramel, coffee, and milk come together perfectly in these icy caramel latte popsicles.
Do you ever go to Target just to wander around and see what you might find? No matter what I always end up with at least a few things in my cart even if I went in only needing one. Last weekend while browsing in the seasonal summer section (which has some super cute things by the way!) I found these reusable popsicle molds! I also walked out with hair products, and a bottle of coconut water.
I had recently been planning to order a popsicle mold on Amazon, but hadn’t gotten around to actually hitting the purchase button. Anyone else have a full cart of potential purchases? No, just me? 🙂 My original plan was to use the coconut water in the popsicles, but couldn’t find the fruits I was looking for. So coconut water popsicles will have to wait.
While I was in the checkout line I was trying to come up with another way to use my new find as soon as possible, because I have the patience of a toddler. There happened to be a Starbucks in this Target across from the registers, and the coffee smell hit me with my popsicle idea! Toby loves coffee ice cream it is his favorite flavor, and I will never turn down an iced latte so why not popsicles too!
These coffee popsicles are perfectly sweet and a little creamy. They are as quick to mix up as your morning cup of coffee and can be kept in the freezer for whenever you want a sweet treat. Caramel frappuccinos were my first ever coffee drink and these caramel latte popsicles take me back to that wonderful flavor.
- 1¼ cups strong coffee
- ¾ cup half & half
- 3 tablespoons caramel sauce
- Mix together coffee, half and half, and caramel sauce.
- Pour coffee mixture into popsicle molds, and then add the popsicle sticks.
- Freeze popsicles for at least 8 hours before removing from the molds. I ran my mold under warm water for a few seconds to get the popsicle to release easily.
